By The Book: Kinfolk Plum And Cilantro Salad.

Is there anything that a sweet potato doesn’t go with? I confess, I’m slightly obsessed with this brightly coloured vegetable. Last week, Kieran and I decided to cook something using my new Kinfolk recipe book. With so many recipes to choose from, it was quite tricky to pick just one! 

But when we stumbled across this plum and radish salad, it sounded like the perfect accompaniment to our staple sweet potato. And it’s super easy (and quick) to make too.
You will need:

Baby spinach leaves
Radishes, finely sliced
Plums, cut into eight pieces
Cheese (we went for feta)
Sweet potato
For the dressing:

2 TBSP olive oil
2 tbsp balsamic vinegar

 We kind of played it by ear about how much we wanted to make, so the final outcome is really up to you (and how hungry you are!) I’d never thought of combining savoury elements such as the radish and spinach with something like plum, but I’m glad we did! The feta really balances out the sweetness too, and worked amazingly with the sweet potato, which is always a winning combination in my eyes!
